Pancreatitis is a disease of the pancreas in which the cells of the organ are destroyed by their own enzymes. In the exacerbation phase, the gland cells are destroyed; in the remission phase, connective tissue is formed in place of the dead cells. This greatly disrupts the work of the pancreas. The most common causes of pancreatitis are alcohol abuse and eating disorders, so treatment should be started with diet.
Dietary recommendations for each patient should be selected individually, depending on the severity of the illness, phase of illness, food intolerance and accompanying illnesses. The menu below for pancteatitis is suitable for the remission phase (that is, for the time when there is no exacerbation) and will help avoid the next exacerbation.
The basic principles of the menu in pancreatitis:
- The purpose of the diet is to improve the work of the pancreas and reduce the load on the digestive system.
- Restricting simple carbohydrates - sweets, baked goods, sugar. Sugar is partially replaced by xylitol or sorbitol. Allowed from sweets - jam, honey, jam.
- The fractional diet - 5-6 times a day.
- Cooking - steamed, baked and boiled. It is necessary to wipe fibrous meat and vegetables rich in fiber (carrots, broccoli, cabbage, fresh herbs).
- The temperature of the food is normal, cold dishes are excluded.
- During remission, the menu can include vegetable and grain soups in the diet. At the same time, vegetables must be cooked well.
- You can use meat, skinless poultry, low-fat types of fish, boiled and baked. Do not use offal (liver, kidneys, brain), smoked meat, salted fish, caviar, sausages, canned food.
- Allowed from dairy products - cottage cheese (up to 20%), milk, sour milk drinks, sour cream in dishes.
- It is recommended to use eggs in the form of omelets or soft-boiled. It is better not to use fried eggs or hard-boiled eggs.
- At the stage of remission with pancreatitis, it is necessary to include in the diet various vegetables and fruits in raw, baked, boiled, stewed forms. Fresh vegetables and fruits are excluded during the period of exacerbation.
- Drinks - weak tea, coffee with milk, rosehip broth and fruit drinks halved with water, fruit juices without sugar. Excludes - black coffee, cocoa, carbonated drinks.
- Do not use foods that stimulate the digestive system: spinach, sorrel, radish, radish, garlic, mushrooms, pickled vegetables, sour fruits.
- Be careful with hot spices - horseradish, mustard, pepper. You can use - dill, parsley, basil, cinnamon.
- Alcohol with pancreatitis is strictly contraindicated.
